“Egg, chicken and potato salad is a delicious ‘super food’.” the Dude of Food

Body builders, fighters, athletes, nutritionists, historians, chefs, archivists and intelligent eaters everywhere all agree that eggs and chicken are good sources of protein and carbs are good for a body in motion. This group also would agree upon the fact that vegetables are good for folks. So when I mixed eggs, chicken, potatoes, celery and onions together, I made a super food. The recipe ingredients follow at the end of article.

I started by peeling, cubing and boiling 3 potatoes in salted water. I love my Oneida knife. I’m not endorsed by them but this knife and I have grown together in the kitchen and we both try to look good while staying sharp.

You can add steamed peas to the mix if you desire. If so now is the time to retrieve them from the freezer and steam a cup full of them. Once steamed, cover and let sit.

Celery and onion

Next, time to chop the onions and celery, while warming the potatoes in water. I like to leave the onion a little chunkier and dice the celery up pretty small as you can see in the photo.

Peel and chop up the hard boiled eggs.

Remove the meat from the precooked chicken thighs.

Once the potatoes are cooked you need to drain them and return them to the hot pan. Add the chopped onions, celery, eggs and chicken to the warm potatoes. If you are adding peas, drain and add them now. Stir in the mayo, mustard, vinegar, relish and spices. No need to stir hard or use mixer as the potatoes are soft and will become mashed if you mix vigorously. It’s not bad, as some may prefer the texture, but personally I like the potatoes to maintain some of the cube shape. The taste is the same.

Once mixed you can enjoy warm with crackers or cool in fridge and enjoy in lettuce bowls or between toasted sourdough slices in the morning with a slice of cheese. It’s a bit like tapas and goes great with wine, anti pasta salads, appetizer trays, breakfast, snacks and parties.

Now getting back to the nutritional status of being called a ‘Super Food’. I think it certainly qualifies for the title as it tastes ‘Super’. The Dude of Food fully approves and recommends trying this. This new super food group deserves an all stars available rating and a Golden Fork Award if there any are to be given.

3 large gold potatoes
4 hard boiled eggs
4 chicken cooked thighs
3 chopped celery sticks
2 chopped green onion stalks
1/4 chopped white onion
3 spoon fulls of mayonnaise
3 circle squirt of yellow mustard
1 spoon full of dill relish
2 cap fulls apple cider vinegar
Add salt, pepper, paprika to your taste.

Additional options could include but certainly not limited to: avocado, peas, sour cream, ranch dressing or raisins. If you add grapes then we probably aren’t friends.

If you happen to be visiting the incredible city of Florence, Italy and are hungry for a piece of pizza then get yourself over to Pizzeria del Duomo next to the Duomo church. This is the place! The staff is hospitable, they make great food and have tables out front in the plaza to sit and enjoy your slices. Be sure to try the meatball pizza. I love this place and went to visit daily. Opening just in time for 7 hungry tourists walking by to enjoy lunch, we lucky visitors were led to the back patio garden of this place, by a friendly staff member, to enjoy a warm spring day and some Tuscan lunch. After some refreshing wine the group chose a number of various items that can be seen above. All were incredible tasting. If you are unsure which place to eat while visiting Volterra then decide to eat at Restaurante Enoteca del Duca. Luckily, The Dude of Food and friends chose to go here and it was one of the best decisions ever!

When in Florence the Dude of Food loves Bar Porta Al Prato.

Seen from the street, Bar Porta Al Prato looks like this corner building. Sitting quietly, this recently opened culinary beauty awaits your entrance, offering everything one could desire once you make your way through the doors and into the soul of this gem. I went daily.

Bar Porta Al Prato in Firenze offers both a great indoor environment or a huge patio out back to enjoy.  The staff here are awesome, extremely helpful, talented, generous and fun besides offering many delicious and thoughtfully prepared Tuscan dishes.

Their menu offers everything from pizza and gelato to pasta and fine wine and everything in between. What a great way to spend quality time dining with your family, friends or team while in Florence.

 The delicious wine comes from local vineyards that produce some excellent flavors.  The homemade gelato is delicious and kid approved. (see photo below)

The Dude of Food lunches at McGraw’s Tucson Cantina

  The Dude of Food went to visit Tucson, AZ. After mom’s haircut we went to lunch at this cool place on a bluff. As you can see be the accompanying photo above, the view from McGraw’s Cantina is amazing. The tables on the outside patio look south over the east Tucson valley. If a gang of old west outlaws was riding up from Mexico, you would see their dust trail way before they would see you from here.

  McGraw’s opened at 11a and they had a Tucson blonde ale on tap. The McGraw’s Cantina menu is full of good things to choose from and the two girls working there were very nice. It turns out McGraw’s hosts a steak night special on Tuesdays. This place really is a party waiting to happen.

  Mom ordered a burger that looked awesome and a coke the waitress was happy to refill. The Dude of Food asked for the BBQ Tri-Tip sandwich and another Tucson blonde ale. The food was really good.

  There are many restaurants in Tucson but McGraw’s Cantina may be host to one of the best. They have tons of party space plus plenty of parking and would make an awesome place to do an Arizona Octoberfest rager, BBQ challenge, wedding party, anniversary party, birthday party or any other celebration.

The Plain Ol’ Hot Sauce is one of the secret ingredients the Dude of Food adds to his homemade michelada recipe. It adds the perfect amount of spice. Truth be told, the Dude of Food also likes Red Rooster, Frank’s, Texas Pete’s and Crystal from Louisiana. They all go great in a michelada, on grits, greens, smothered chicken, gravy, stuffing, waffles, wings, eggs and much more.

La Taberna Gallega in Barcelona makes great paella.

La Taberna Gallega located in the marina in Barcelona, Spain is incredible. The room gets full but the vibe is energetic and upbeat. The staff is super cool and fun. If you are in the Barcelona marina area come on over. There are many places to eat in the marina but I chose this one and was completely satisfied. Best paella and sangria of my life. The numbers of pounds of sugar people on this planet eat is ridiculous. Be careful people. In some countries people actually eat more than 120 pounds of sugar per person! Yes, some is disguised in the form of high fructose corn syrup, ethanol and recycled farm food slop lending to the crazy streak in animals and then lending itself to the food chain for consumers consumption.

Learning out that corn syrup is finding its way into beer is not only disgusting but disrespectful, careless, greed driven and idiotic but also refutes the German Beer Law known as Reinheitsgebot from the early 1500’s.
